  • 1 large onion, chopped
  • 3 carrots, peeled and sliced into coins
  • 2 stalks celery, sliced
  • 1/2 tsp. dried oregano or dried thyme
  • 1/2 tsp. dried rosemary
  • 3 cloves garlic, minced
  • 1 bay leaf

  • 1 ltr vegetable stock
  • 1 x 400ml coconut milk

  • 2 tbsp oil
  • 2 small white onions, finely chopped

  • 1 celeriac or 1 medium sized potato
  • Pinch of salt
  • 300g mushrooms
  • 3 tbsp tamari (or soy sauce)
