Spring is the Queen of all seasons as far as vegetables are concerned!

There are so many options that there is no excuse for not going healthy! Veggies are full of nutrients, vitamins and antioxidants! For a side dish or main course , they deserve a chance on our table!
Altercooking made a selection of 10 early spring veggies plus an ordinary not recipe for each of them that is worth trying!

1. Peas

  • 1 oz red bell pepper
  • ½ medium red onion (2oz)
  • 1½ cup frozen peas (7oz)
  • 2 tsp soy sauce
  • black pepper

2. Lettuce

Lettuce Wrap Black Bean Tacos with Cashew Sour Cream

What you’ll need:

Black Bean Mix

  • 2 cups Black Beans
  • 1 small Spanish Onion sliced lengthways
  • 1/4 cup Scallions sliced
  • 1 small Red Bell Pepper (Capsicum) finely diced
  • 1 clove Garlic minced
  • 1/2 tsp chili flakes optional or to taste
  • 1/2 tsp coarse celtic sea salt or to taste
  • 1 tsp Cumin Powder
  • 1 tsp Smoked Paprika
  •   Black Pepper to taste

Toppings

  • 1 small Avocado diced (or Guacamole)
  • 1 large Tomato diced
  • 2 small Corn Cobs, kernals
  • 1 handful Cilantro, or herbs of choice
  •  hot sauce such as sriracha optional topping
  • 1 large head Romaine / Cos Lettuce washed and leaves seperated

Cashew Sour Cream

  • 1/2 cup Cashews
  • 1/2 cup water
  • 1 tbs Lemon Juice
  • 1 clove Garlic
  • 1/4 tsp coarse celtic sea salt

  • 1 cup uncooked red quinoa
  • 1 pinch coarse salt and pepper
  • 1 lemon, halved and juiced
  • 5 large artichokes
  • 3 tbsp red wine vinegar
  • 3 tbsp extra-virgin olive oil, plus more for drizzling
  • 3 tbsp finely chopped parsley, plus more for garnish
  • 2 tbsp shelled sunflower seeds, plus more for garnish

5. Avocado

Cucumber Tomato Avocado Salad

What you’ll need:

  • 1 lb Roma tomatoes
  • 1 English cucumber
  • 1/2 medium red onion, sliced
  • 2 avocados, diced
  • 2 Tbsp extra virgin olive oil or sunflower oil
  • Juice of 1 medium lemon (about 2 Tbsp)
  • 1/4 cup (1/2 bunch) cilantro, chopped*
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper
    *Note: if you aren’t keen on cilantro, fresh dill is a good substitute

  • 2 cloves garlic, minced
  • 2 small or 1 large bulb of fennel, thinly sliced

  • 1 15oz. can cannellini beans (white kidney beans)
